Located in a small, unassuming building adjacent to a gas station on Cerrillos Road, Horseman’s Haven isn’t a place that would naturally draw a lot of attention; however, the parking lot stays busy for good reason. The small diner has been a local favorite in Santa Fe since 1981, known for delicious New Mexican cuisine with green chile that is borderline incendiary. The heat of the chile stands out in a town where green chile is often toned down for tourists.

The green chile is available in Levels 1-5, though I haven’t tried anything beyond Level 2. That was sufficient. I don’t like crying in public. For adventurous, but cautious diners, start with Level 1. If you order green chile with no mention of heat factor, the default is Level 1. Level 2 chile is always served on the side.

Servings are hearty and they don’t hold back when it comes to “smothering” with chile, which I appreciate. The breakfast burrito is big enough for two people, due in part to the generous side of potatoes. The Huevos should be enough for two people, but I usually find a way to consume it solo.
